As a side note, caught the problem, although I don't know if it's
related, when I configured XeTeX, I removed a line from
`09-texlive.conf`.

By re-adding the line


  <dir>/usr/local/texlive/2021/texmf-dist/fonts/type1</dir>


The problem was solved, although (as far as I remember) the XeTeX
configuration did not affect pstricks at all, but it was explained to
me that gs uses a similar search pattern for fonts as XeTeX, so it did
the Courier substitution silently without returning an error.


PS: I had removed the line because of the problem described by David
(https://tug.org/pipermail/tex-live/2021-April/046700.html).
