TeX needs a format file, which is a sort of fast-loading memory dump. Such a
dump fits only the binary program it is made for. So when you replaced the
binaries, you also had to recreate the dumps.

Depending on your installation there are tools for doing this. teTeX
has texconfig.

By hand it is something like:
% pdftex -ini \\input latex.ltx
