[OS X TeX] TeXShop and M1

George,

Starting TeXShop with the Shift key down on Arm starts TeXShop without loading the most recent source,
exactly on on Intel.

But you should go to Apple's System Preferences, under the General tab, and make sure that neitther  "Ask to keep changes before closing documents" nor "Close windows when quitting an app" is checked.
