Arial is a metrically compatible stand-in for Helvetica.

use the helvet package, (you may need to reset the rm and other
defaults) and get Donald Arseneau's sansmath.sty package from CTAN to
make it work in math mode and you should be set --- if you don't embed
the fonts in the .pdf and open it on a machine w/ Arial, but no
Helvetica, Arial will then be used as a replacement.
