The Hoefler Text font and other, butr not all, systems fonts were changed from ttf to ttc fonts in Snpw Leopard and this has lead to problems.
Take a look at crash logs and see what it is that is crashing. I've stopped using the xdv2pdf back end and only use the default xdvipdfmx back end. Some things don't work but I also am no longer seeing crashes.
Also, the 10.6.2 update seemed to make things crash. Try doing a Safe Boot (Hold the Shift key down when booting until the login screen appear and then login). This clears out many caches and may solve your problem if you still see crashes when using xdvipdfmx.
