[XeTeX] tex-text and more quotes

I think that the main issue is that tex-text should do what users expect 
   given years of using tex font metric files where some of these multi 
to one mappings were defined in the tfm files; (( )) were never part of 
the  list of such mappings, so older documents would give unexpected 
outcome
