I've also found

National Institute of Economic and Social Research (NIESR) wants a postdoc
research associate with economics experience and "Knowledge of standard
software packages, particularly MATLAB, LATEX and standard data analysis
packages".

It does seem that LaTeX is a valuable (and sometimes required) skill for
some positions in academia. This is as it should be.
