If you are familiar with hypertext fonts (*.htf) and know how to use a
different set of *.htf for your TeX4ht process, you can easily
translate greek symbols or for that matter any character into unicode
code points which will be acceptable to your word processor format.
TeX4ht provides a large number of hypertext font sets. The default
TeX4ht behaviour is anything non-latin is converted into *.png images.
