If your curves are reasonably well approximated by cubic splines (and no
worse) then the mentioned packages are sufficient.

If you want to plot functions and use them in your TeX then you might
want to examine "gnuplot"; this can produce output in metapost, mf and ps. 

On the other hand, if one believes Knuth, then cubic splines with enough
controls *cannot* be distinguished by the human eye from the *real*
thing---even when scaled up. "The eye only sees the second derivative or
less".
