First I tried to test this beta by removing a LaTeX package at random, but every time the removal aborts because the package is part of collection such and such, like

2021-03-11 08:30:19 +0000 Warning tlu_ipctask[13947]	tlmgr: not removing a4wide, needed by collection-latexextra
2021-03-11 08:31:24 +0000 Warning tlu_ipctask[14013]	tlmgr: not removing c90, needed by collection-langcjk
2021-03-11 08:32:24 +0000 Warning tlu_ipctask[14056]	tlmgr: not removing paratype, needed by collection-fontsextra
2021-03-11 08:33:16 +0000 Warning tlu_ipctask[14098]	tlmgr: not removing substances, needed by collection-mathscience

I imagine this would require --force on the tlmgr side. Not that this would be really desirable in TLU, this failsafe mechanism is here for a reason, I can't see why, apart from testing purposes, a user would want to force the removal of an individual LaTeX package.

So I ended up re-installing tex.x86_64-darwinlegacy then removing it. It works, the only thing I noticed is that the folder /usr/local/texlive/2021/bin/x86_64-darwinlegacy, created when installing the package, is not deleted when removing it. I imagine this is not TLU-specific, that it's the way tlmgr works.
