    Is this what should be expected?  

Looks ok.

    Notice the `man' symlink (pointing to
    `../../texmf/doc/man') in the new binary directory.  Is this correct?

Well, it's intended anyway.  There are some man programs -- at least the
one on MacOSX, and I think others -- which will automatically look for a
man directory in the directory where a binary is found.  Which obviates
the need to set MANPATH for TL users, which is a good thing.

Even if a particular man program does not look at the dir, it seemed
harmless to have it there.  Hopefully no shell has such a bad bug that
it considers a symlink to a directory to be an executable program!
