[texhax] Customising \& per font

How can I change the font used for the ampersand, in a way that depends
on the surrounding font?  Specifically, I want to type
	big \& small; \textit{tall \& wide}
and have the effect of
	big \textsc{\&} small; \textit{tall \& wide}
instead.

(I’m using the font Fontin, where I like the italic font’s ‘&’, but I
think the upright font’s version is too big for the short snippets of
text in my résumé.)

Is there a good way to do this?
