If you want to make dvi -> dvips -> ps{2,to}pdf the default, go to TeXShop -> Preferences -> Typesetting tab and in Default Script choose ``TeX + DVI'' (or ``TeX + Ghostscript'') instead of pdfTeX.

You can choose which distiller to use ---Ghostscript (ps2pdf) or Apple distiller (pstopdf) in the Misc tab.
