If one is going to extend the usage of ``publishing house'' to  
include scholarly societies, then there're a lot of them which use  
LaTeX --- SIAM comes to mind, pretty much all of the mathematics/ 
physics-oriented ones do. One could get a good/quick overview of this  
by checking CTAN for documentclasses / packages related to specific  
publications.
