sudo which latex, indeed no, but

     axretif at Sophia-GNULinux:~$ sudo su
     root at Sophia-GNULinux:/home/axretif# which latex
     /usr/local/texlive/2012/bin/x86_64-linux/latex

works as expected (with PATH in /etc/environment under Ubuntu).
