you don't need to concern yourself with experimental work, surely?  that
stuff may be interesting when luatex becomes stable (hans says, in a
year's time), but now, it's just for the experimenters.

there's a jolly good book (the latex companion, 2nd ed) which i would
recommend to anyone who's already a latex user.

for the non-latex people, i think spivak's "the joy of tex" is the
canonical ref for amstex.  i don't own a copy myself, but it seems ok to

the latex graphics companion is a straightforward book, too; unless you
can get a very cheap copy (2nd-hand or something), don't buy it now,
since the 2nd edition is imminently going to be released.

(fwiw, the mathematics required to understand the graphics package doc
is pretty trivial -- the sort of thing we used to learn in our early
'teens back when i was a lad, and children learn it at latest by the
time of university entrance for a science subject, even nowadays.)
