Yes, you don't even need LaTeX for this purpose -) PdfTeX is enough. Try 
this on the beginning of the document.

\pdfcatalog{/PageMode /FullScreen}
\pdfpageattr{/Dur 2 /Trans << /S /Dissolve /D 0.5 >>}

Look into pdf spec for details.
