Documentation for this sort of thing really should be better.

For fonts like Arial/Helvetica, take a look at PSNFSS

To install an arbitrary font like Copperplate:
  - get Karl Berry's FontName scheme from CTAN
  - rename the files
  - get FontInst
  - run Fontinst on the renamed files
  - convert the vpl and pl files to vf and tfms
  - move them to the proper places and update for your font map files
