Howdy,
It's TeXShop's Key Bindings that doing that translation. You can temporarily turn it off using Source->Key Bindings->Toggle On/Off. If you want to remove that translation ©->\copyright i.e. Opt-G->\copyright use Source->Key Bindings->Edit Key Bindings File… remove that item and Save the file.
