[OS X TeX] %!TEX processing directives in TeXShop

I understand that one can include processing directives in the .tex file like 
% !TEX program = pdflatexmk

I would like to study the documentation on such directives.

Where would be a good place to look?

(I use TeXShop 4.68 on MacOS Monterey 12.2)
