Aha.

A careful inspection of TeXShop reveals that it reads and sets the two items reflecting how to set up double display and multiple double display WHEN A DOCUMENT IS FIRST OPENED.

Consequently, if you add one of the magic lines to the top of a document (or to the root document)
or if you change the setting in TeXShop Preferences, you must close and then reopen your document to see if the changes made any difference.

This may explain your experience this evening. 

Sorry for the noise; I had forgotten that little detail!
