That’s why using \AtBeginDocument{\renewcommand … } does the job.
Now the redefinition comes *after* what babel has done, also delayed.
As for the page numbering on the 1st page,
that is definitely triggered by the subfig package.
Try using the subfigure package by the same author.
It is a little older, but it does *not* load caption.sty
which is likely the cause of losing some document settings
with memoir document classes.
Test this theory by trying combinations of:
1. commenting out \usepackage{subfig}
2. loading captions directly
3. loading the subfigure package.
(4. even try a different document-class than memoir !)
If you definitely need the captions package — quite possible, as it does
some very good things), then you’ll have to see whether there are
any compatibility options to memoir designed for use with caption .
If not, you’ll have to find how to reset some of the changes that are made.
After commenting it out chapters are renamed to Lectures trough out the document.
