[OS X TeX] I would like TeXShop to do -kpathsea-debug=NUMBER

Arthur,
The Preference items for tex and latex are only for the built-in tex and latex commands in TeXShop. Engines are entirely separate. Just open an engine file, find the call to tex or latex, and add the desired flags.
