[OS X TeX] 2021 installed but "not found"

Your advise worked (worth stating though that never in the past had I ever to change TeXShop defaults under Engine; was this stated somewhere
in the documentation of 2021 and I missed it the first time around? Also never before had I to use the TeXLive Utility [I am embarrassed to admit I jsu used it
for the first time now] and yet all installs, up to and including 2020, went through A-OK)
