[OS X TeX] Setting TEXINPUTS/BIBINPUTS on Catalina

Hello all,

I've just got a new Mac after a few years without one, and need to set 
up so that both the Terminal and GUIs have the right environmental 
variables set. What's the recommended way to set TEXINPUTS and BIBINPUTS 
on Catalina?
