How about using https://wetransfer.com/ to pass a ZIP file of your document
direct to Herb and Dick? It can handle 2GB.

I have quit and restarted TeXShop, I have restarted the Mac, I have tried on machines with 64GB memory thinking that my big project might be causing problems, but all to no avail. As I noted, I can run the same document without problems (consistently) on texstudio but I’d rather not go there.
I have a hard time sending you the Projet files I am working on now, because the project is a big book and with a number of included files going up to 600 pages.
I guess I’ll have to grin and bear it...

Sigh... This problem has been around for a while. Unfortunately there has never been a case that has been consistent enough to try to figure out what is going on. I've had it happen oncec or twice a month.
First try to Restart TeXshop. If that doesn't work try to log out and back in. Finally try to reboot. Oh, macOS is up to 10.14.5 so you might try that. If that doesn't make things better maybe you can send the document file(s) to Dick Koch or Me and we can see if it happens (with any consistency) on our systems.
