Howdy,
I certainly don't have a problem with TeXShop and UTF-8. Do you have TeXShop->Preferences->Misc->During File Save (for users in Japan)->automatic UTF-8-Mac to UTF-8 conversion checked? Do you have TeXShop->Preferences->Source->Encoding set to Unicode (UTF-8)?
