I have become a big fan of Aquamacs (Emacs with some Mac bindings added on top). It integrates well with Skim (pdf viewer). I tend to use it for my first effort with a document, then move later to TeXShop, when I'm mostly just cleaning up. I really wouldn't want to give up either.
