Those on this list know that I'm completely unbiased :-) but I use TeXShop for all things LaTeX.

With recent versions of TeXShop (now at 2.41) take a look at Help->TeXShop Tips & Tricks for an introduction to some of the less know, and I suspect used, advanced features of TeXShop that I find invaluable.
