Howdy,

I just was able to change the shortcut to Shift-Opt-Cmd-I using System Preferences->Keyboard->Keyboard Shortcuts->Application Shortcuts (in OS X 10.6 --- don't remember where it is in 10.5 and I think it was available in 10.4) which should then allow you to assign Opt-Cmd-I back to what you wish.
