The update could have also changed files in (/private)/etc which set  
PATH and MANPATH ...

The command line programme lsbom can show you which files such a  
package will affect. Pacifist can do similiar things in Aqua.


Actually MacTeX and its configuration surely were not changed – only  
the system ...
