Doesn't this produce colored text rather than highlighted text, as  
you would do with a marker so that the text is black on a yellow  
background?

Absolutely not! I am long retired from "the circuit".

I am using yellow only because it translates to a very nice grey when  
printed by my school's duplicating department. Is there a "device  
independent" grey?

Probably because yellow markers are popular for highlighting printed  
matters.
