Assuming your thesis matches your e-mail address,
it would probably be easiest to use the Brown
thesis class:
http://olympus.het.brown.edu/~danieldf/latex/
The documentation is in the file itself. Put it in ~/Library/texmf/latex
If you want to make your own version, you might
want to use the memoir class and the setspace
package for double spacing. In any event the
memoir manual is a fantastic guide to how to
format long documents of this sort. (In a
terminal window, type texdoc memman to see it.)
