[OS X TeX] [off-topic] best font set for using Times?

Aha! Thank you.
What formats need to be rebuilt? Just the ones I have created or all
of them. If all of them, how does one do that?
I apologize for all the elementary questions, but this aspect of TeX
is all new to me.
