[OS X TeX] Configuring a new TeX installation

TeX Live comes pre-configured to include all hyphenation patterns (a
list was posted just a few days ago). But you're right, a
configuration GUI has yet to be added.

For now this probably is the safe bet, but there will be a separate
config GUI, eventually, perhaps as part of the system preference
panel Jerome made (developers are welcome).
