To the last question: yes, you need to reinstall the whole TeX  
backend (in /Library/teTeX/), but not the various GUI programs  
associated with it (TeXShop, iTeXMac, BibDesk, etc.). In case you're  
also using XeTeX, you need to reinstall it afterwards as well.

How you do this: in i-Installer, first update the i-Package, you'll  
then see the dates for the local and remote versions become the same;  
then Install & Configure (authenticating when asked to, which may  
happen several times depending on your processor and connection speed).

Please don't feel embarrassed at all: we have all asked ourselves  
these questions at one point or another. And to a novice having only  
used Apple Installer or Vise-like installers so far, i-Installer can  
be a bit intimidating at first (the separate Update and Install  
concepts), though it gets quite natural as soon as you get used to it.

Next steps: installing Unix-derived software through port management  
infrastructures like DarwinPorts or Fink; then compiling software  
yourself!
