A header like

	%!TEX encoding = UTF-8 Unicode	%% -*- mode: LaTeX; coding: utf-8; -*-

which is understood by GNU Emacs, is not recognised by TeXShop 2.10,  
although I use a TeX comment for GNU Emacs related hints.
