[OS X TeX] Euro-Symbols are subsituted by question marks

It probably switched back to the standard MacRoman-encoding ... the same 
(miss-)behaviour just costed me an hour to recover parts of my thesis :-(

Next time I'l better controll the ISO latin1 switch after changing 
anything on TeXShop.
