[OS X TeX] Applications called by 'Typeset' in TeXShop

In TeXShop 1.35 the user has the option of setting the program and the 
encoding at the beginning of the .tex or .ltx file to be typeset, and I 
find it convenient to place the two lines below at the top of my file:

%&program=xelatex
%&encoding=UTF-8 Unicode

This works fine, except when I want to run BibTeX. Switching the button 
to the right of the 'Typeset' button to 'BibTeX' has no effect, as the 
setting of that button is overridden by the top line of the file 
(%&program=xelatex) and the 'Typeset' button runs XeLaTeX, not BibTeX. 
The only way to run BibTeX is to temporarily delete the top line of the 
file, run BibTeX from the 'Typseset' button, then reinsert the top line 
of the file.

My question is: Is my description above correct? Or is there a better 
way? Am I missing something? I don't mind doing things this way, but it 
seems rather clumsy.
