Indeed the reference manual is a technical document.

You'll find a few new concepts explained.

I've written a few papers for TUGboat on LuaTeX, I think the following
two might be of interest:

They aren't that easy, but it's hard to find something interesting and
easy in LuaTeX: after all it's TeX, which is not easy.
