I suppose the >> is there to get a single > ?

The whole  <> shortcuts have been a mistake in the first place I guess, 
but we have them now so have do deal withm.

But I suggest to use \string> instead because that will work even if the 
text is moved later to a different format where doubling would be wrong 
(ie when typesetting it for TUB) otherwise I already see >> appearing
