The folks who helped you explained how to change the font size permanently in TeXShop.
You can also change it temporarily as follows

Type command-A (that is, the command key and the letter A simultaneously) to select all text.
Then type command-PLUS to increase text size or command-MINUS to reduce text size. You can
type several of these until you are satisfied. None of these key strokes require the shift key.
