What editor are you using to type your source in MacTeX? Most editors have
a preference setting to output UTF8. You might also need to switch to the
German or Turkish keyboard in Apple Preferences.

It would be helpful if you'd go to the MacTeX site and ask for support there,
since then you'd communicate directly with people familiar with MacTeX
and the Mac: http://www.tug.org/mactex/support/emailform/index.html.

It would be useful to send us a source file which typesets correctly
in Miktex.
