Almost the entire set of the /Collected Works of Erasmus, /prepared by 
the Pontifical Instute of Mediaeval Studies and published by the 
University of Toronto Press, and running to some 50 volumes or more, is 
done in TeX.  I believe some of the first volumes may not have been, but 
TeX was adopted early on in the production.
