TeXShop alone is a front end for a TeX Distribution (where the (La)TeX programs and other files reside) and from what you say it appears that you have a TeX distribution or the pdf(la)tex program wouldn't be found at all. I'm just wondering what distribution you have. Do you have a System Preference Pane called TeX Distribution? If so, what distribution does it ``say '' is active?
