I have this in my .emacs:

(custom-set-variables
  ;; custom-set-variables was added by Custom.
  ;; If you edit it by hand, you could mess it up, so be careful.
  ;; Your init file should contain only one such instance.
  ;; If there is more than one, they won't work right.
 '(LaTeX-paragraph-commands (quote ("orderedlist" "unorderedlist" "li"))))

This was obviously created using customize, but this should work too:

  (setq LaTeX-paragraph-commands '("orderedlist" "unorderedlist" "li"))

However, it seems there's a related bug in AUCTeX:
