One book I haven't seen mentioned but which I like a lot is
Math into LaTeX by George Gratzer
Peter

Besides the books already mentioned:
LaTeX:
(1) Guide to LaTeX, 4th edition (not free).
(2) The Not so Short Introduction to LaTeX2e (free).
(3) Formatting Information (free).
Plain TeX:
TeX for the Impatient (free).
http://tug.org/books/ (discount when buying books from A-W, + help TUG
:)
http://tug.org/begin.html (basic references)
http://tug.org/interest.html#doc (longer list)
William's pages are also nice, not to mention the FAQ entries on the
subject.
Happy reading,
karl
