You can change the default encoding in TeXshop->Preferences->Source->Encoding.
You can also simply use the line

It will also be used to read the file by TeXShop when you re-open the file.
Thank you! That was obviously my mistake. It worked. a million Thanks to all,
who helped. All I need to do now is to solve the problem with ligatures, which I
shall solve on my side.
