[OS X TeX] final tex live 2007

I believe that's appropriate in this topic as well:

I have old gwTex distribution, just install the new gwTex distirbution.
How do I make sure that the old one is gone and the new one is used?
I like the GUI panel for distributions thing do you have to keep
MacTex/liveTex to have it? I currently don't have that installed.
