The most interesting was the talk by Ross Moore (Using TeX to manage IT for a Mathematics Congress). He is also very good at presenting his talks. I also found the talk by Mirko Janc (LaTeX in real-world math typesetting) useful. The Luau was fun, the food served at lunch was excellent and what a location! All those who were involved in the organization should be very pleased with what they achieved. I am really struggling to come up with any criticisms at all!! One point that I wanted to make was how nice it was to have a free day in the middle of the conference (I know it was supposed to be the Mac day!). This also happened in India last year for different reasons. Everybody (well, at least the friends that I made) seemed to appreciate this free time. I think that every conference should have a free day in the middle. best wishes
